Recipe: Pink Taco's Mexican Bread Pudding French Toast

Pink Taco Executive Chef Angelo Chavez joined us on Good Day LA to make the restaurant's signature brunch item: Mexican Bread Pudding French Toast.

Recipe:

12oz cut bread
4oz heavy cream
4oz sweetened condensed milk
2oz whole milk
6-8 eggs
1tbl cinnamon
1tsp vanilla extract

Method

Cut bread into ½ squares let dry overnight. Put bread into large mixing bowl add cinnamon and incorporate. In separate bowl add cracked eggs and mix to break up yolks, then add remaining wet ingredients and mix until well incorporated the mixture should be thick enough to coat the back of a spoon, if mixture is to thin add 1-2 extra eggs.

Next pour 1/3rd of wet ingredients over bread crumbs, incorporate well with spatula, add all wet ingredients slowly the bread mixture should be wet but not runny you may have extra wet ingredients.

Once bread is well incorporated with egg mixture let sit for 10 min, then put bread mixture into a greased and wax paper lined bread pan, cover with plastic wrap and aluminum foil, and place in a 375 oven for 30min, at that time pull bread out of oven remove foil and plastic wrap and cook bread for an additional 15 minutes uncovered at 300 cook until bread is fully set.
