Recipe: Horse Thief BBQ's Spare Ribs


Two racks baby back pork ribs

Pork Rub
•    1/2 cup brown sugar
•    1/4 cup sweet paprika
•    4 tablespoon black pepper
•    4 tablespoon kosher salt
•    1 tablespoon dry mustard powder
•    1 tablespoon dark chili powder
•    2 tablespoon granulated garlic
•    2 tablespoon granulated onion
•    1 Cup apple cider vinegar
•    4 tablespoon honey


Remove silver skin from back of ribs. If necessary, cut racks smaller to fit into baking dish. Season ribs on both sides with pork rub, cover with plastic wrap and let rest in refrigerator for one hour. Preheat oven to 300-degrees. Remove ribs from refrigerator and uncover. Add vinegar and honey to the bottom of the baking dish, then cover with foil. Braise in oven for 2 hours. Remove ribs from oven, uncover and drain excess liquid. Set oven to low broil. Brush ribs with favorite bbq sauce and broil on low until bbq sauce begins to caramelize.
