RECIPE: Healthy and delicious taco skillet dish for the whole family

- Nicole Twyman, founder of www.fitfynefabulous.com, joined us with Darrin Henson to make a healthy and delicious meal for the whole family!

Fabulous Taco Skillet
Serves 4

Ingredients
•    1 lb grass fed beef (or ground Turkey)
•    1 orange bell pepper, diced
•    15 oz cooked/rinsed pinto beans
•    15 oz cooked/rinsed black beans
•    Kernels from one corn on the cob
•    1, 7 oz can fire roasted, diced green chilies
•    2 cloves garlic minced
•    cumin, sea salt & freshly ground black pepper
•    1 cup sliced grape tomatoes
•    1 cup diced avocado
•    Sprinkle of sliced green onions

Brown 1 lb grass fed beef (or ground Turkey) on medium high heat with 1 small diced onion.

Add
1/4 cup water,
1, 7 oz can fire roasted, diced green chilies.
2 cloves garlic minced,
A good sprinkle of cumin, sea salt & freshly ground black pepper to taste.

Let cook, stirring constantly for about 5 minutes.

Then add
1 orange bell pepper, diced
15 oz cooked/rinsed pinto beans
15 oz cooked/rinsed black beans
Kernels from one corn on the cob
Heat through, stirring for several more minutes,
Then add
1 cup sliced grape tomatoes
1 cup diced avocado
Sprinkle of sliced green onions
