LOS ANGELES (FOX 11) - It’s Labor Day and we are having a party with Mastro’s Steakhouse, known for its incredible steaks, seafood and sides.
We’ve got Mastro’s Beverly Hills' Chef Walter Mayen here to show us how to kick up our Labor Day sides!

Kick Up Your Mac & Cheese
Chef Walter: What Labor Day party – or any party in my book – is complete without mac cheese? Everyone loves it.
-Start with your favorite macaroni & cheese.
-Add Tomatoes, Jalapenos and Bacon.
Kick Up Your Mashed Potatoes
You’ve got steak at your Labor Day bash, so you have to have potatoes. At Mastro’s, – everyone loves our Lobster Mashed Potatoes -- so here’s how you can make those mashed potatoes really special:
-Start with great mashed potatoes (recipe follows)
-Add Bacon, Sour Cream, Cheddar Cheese and Chives
10 lbs peeled potatoes cut in 2 inch chunks
1 qt Half and Half Cream
1 lbs Butter
1 Tb Salt
1 tsp Ground white pepper
3 TB. elephant roasted garlic
Split 10 pounds of prepped potatoes in two pans, evenly.
Place in pre-heated steamer for 40 minutes or till tender.
Transfer potatoes to potato ricer. Using the ricer, slowly start to rice potatoes 3-4 minutes making sure not to leave any lumps.
Mix or whip until smooth. Do not over-whip or the potatoes will be sticky (a mixer is okay, but not a food processor).
Kick Up Your Labor Day Corn
Since we’re talking carbs today, we can’t leave out sweet summer corn, which is so amazing this time of year.
-Start with sweet corn, freshly cut from the cob
-Sauté with butter till you have a little char. Add Jalapenos and finish off with parmesan cheese.
