Stephane Treand: 'Best Craftman in France'

Pastry Chef Stephane Treand, owner of ST Patisserie and Pastry School at SOCO Collection, as well as ST Chocolat at The OC Mix in Costa Mesa, is here to  create his beautiful sugar sculptures for Valentine’s Day!

 Chef Treand has earned an M.O.F. title, (Meilleur Ouvrier de France) “Best Craftman in France,” and is sharing his craft with his pastry students and guests at his two retail locations at SOCO. He offers Master Series classes, a 3 month intensive program similar to traditional pastry school, as well as 5 day and 1 day classes for beginners. For last minute Valentine’s Day gifts, ST Chocolat at The OC Mix at SOCO in Costa Mesa has perfect, festively-packaged options for anyone with a sweet tooth on your list. His artisan, French-inspired sweets are handmade on-site daily –options include macarons, bonbons, madeleines, truffles, and more

  • 4 foot table will have a ready-made chocolate sculpture, additional desserts/pastries (macarons, bon bons, packaged chocolates and items from ST Patisserie/ST Chocolat), flowers, Valentine’s Day themed décor
  • 7 foot table will have the elements and equipment for the sugar creation
  • At 8:45am, Stephane Treand will do his first live tease and begin creating the sugar show piece
  • Between 8:45am and 9:40am, Stephane and his assistant will put together a beautiful sugar creation, themed Valentine’s Day
  • During the live segment, Stephane will be putting together the final touches on the sugar sculpture (maybe the hosts might like to help) - he will be high-energy and excited about Valentine’s Day and the sculpture he created, sharing tips and tricks on how to create them (What goes into the mixture, how long to let the molds set for, what is the best gluing agent, etc)
  • Additional messaging, if time allows: ST Patisserie and ST Chocolat at SOCO and The OC Mix have some delicious handmade, artisan chocolate items for last minute gifts – perfect for a teacher, friend, co-worker, etc. For a special occasion, over the top and indulgent cakes can be made to order in advance; Stephane Treand is one of 4 MOF Pastry Chefs in the United States and holds classes at his school at SOCO – whether a series to learn many different dessert techniques (a truncated version of pastry school), or a one off class to learn how to make macarons or eclairs
