Authentic Italian from Chef Stephen Kalt and Spartina Restaurant

- With New Years here, we’re joined by Chef Stephen Kalt from Spartina Restaurant. He making dishes which represent our hopes for the new year. PROSPERITY!

Chef Stephen brought regional dishes specific to New Years, all related to prosperity, wealth and growing. For example, lentils feel like coins and as they cook, they expand. With rich pork, they’re fatty.  Poor people’s food, not rich people’s food. Sicilian pizza is fat, rich, with lots of cheese on top. Little hats and short ribs were also in the mix. He made some risotto while on set.
